- 1 Tbsp Basil pesto (from a jar)
- 2 ozs pickled Red pepper (from a jar)
- 2 leaves Lettuce
- 3 Tbsps Goat cheese
- freshly ground peppers

Heat toast. Spread one slice of toast with pesto, divide lettuce leaves and drain bell peppers.

On second slice of toast, spread goat cheese and generously season with pepper. Cover first slice of toast with lettuce leaves and bell peppers and cover with second slice of toast. Cut diagonally, place on a plate and serve.
