Brussels sprouts can stimulate our digestion by containing bitter constituents, as more enzymes are produced in the liver and bile. In addition, these substances can soothe an upset stomach.

The nice thing about raclette is that everyone can vary as much as they like. Try raclette with Brussels sprouts with the classic raclette cheese, feta or mountain cheese. Other vegetables such as corn or leek also go well with the sprouts.

800 grams Brussels sprouts

2 shallots
2 tablespoons olive oil
150 grams Mozzarella
freshly ground peppers
1 tablespoon chopped parsley

Preparation steps

Rinse brussel sprouts and halve. Cook in salted water for about 10 minutes or until al dente. Drain well. Place sprouts into four ramekins. Peel shallots and cut into rings. Spread over sprouts.

Drizzle with oil and season with salt and pepper. Cut mozzarella into cubes and sprinkle over Brussel sprouts. Grill under hot broiler for about 6-8 minutes, watching carefully. Sprinkle wtih herbs and serve.
