200 grams aged Goat cheese (sliced, such as Chevrotin the Bauges or Charolais)
500 grams Quince
1 Vanilla bean
1 organic lemon
1 Tbsp honey
2 Tbsps sugar

Preparation steps

1.

Peel and halve quince, pit and dice. Combine with squeezed lemon juice, slit vanilla pod, some water and honey. Simmer, covered, for about 5 minutes. Strain through a sieve, collecting all syrup. Cool quince. 

2.

Caramelize sugar in a small saucepan and add syrup, simmer until thick.

Stack cheese and quince, alternating, on plates and drizzle with caramel sauce. Serve.
