2 Apple (russet)
2 Tbsps honey
½ lemon (juice)
1 Star anise
100 grams Goat cheese
2 Tbsps Whipped cream (or goat's milk)
salt
white, freshly ground peppers
1 handful Arugula
1 Tbsp white balsamic vinegar
1 Tbsp olive oil
chips Goat cheese (as desired)

Preparation steps

1.

Peel the apples, quarter, cut out the core and dice. Boil in a covered pot with the honey, lemon juice, star anise and a little water. Simmer until the apples soften, 10-15 minutes. Remove the star anise and let the compote cool.

Mix the goat cheese with the cream until creamy and season with salt and pepper.

3.

Rinse the arugula, shake dry and pluck small. Mix the balsamic with the oil, season with salt and pepper and toss with the arugula.

4.

To serve, fill 4 glasses with the compote, dollop with the cream cheese and arrange the arugula on top.

5.

serve to taste with goat cheese chips garnished.
