- 50 grams chopped Peanuts
- 300 grams finely chopped Zucchini
- 600 milliliters Vegetable broth
- 100 grams grated Parmesan
- 1 Tbsp finely chopped mint
- salt
- freshly ground peppers

Preparation steps

Sweat onion in hot oil until translucent. Add peanuts and let sauté briefly, then stir in the zucchini and cook 2 minutes.

Pour in vegetable broth, bring to boil and simmer quietly 5 minutes. Stir in the Parmesan and season with salt and pepper. Garnish with mint and serve.
