2 day-old White rolls
200 milliliters milk
70 grams softened butter
50 grams ground Hazelnuts
350 grams Sour cherry (from a jar)
2 eggs
50 grams brown sugar
1 generous pinch Ground cinnamon
1 generous pinch grated Lemon peel (fresh)
powdered sugar (for dusting)

Preparation steps

Cut bread into 0.5 cm (approximately 1/5 inch) thin slices, place in a shallow dish, pour milk over bread and let stand for about 20 minutes.

Butter casserole dish and sprinkle with hazelnuts.

Place cherries in a colander and drain well. Separate eggs. Beat egg whites until stiff. Whisk the rest of butter with sugar until fluffy. Add egg yolks, soaked bread slices and remaining hazelnuts to butter mixture.Add cinnamon, lemon zest and drained cherries. Fold in egg whites. Place pudding into a casserole dish and bake in preheated oven at 180°C (approximately 350°F) for about 45 minutes or until golden brown. Dust with powdered sugar and serve.
