- ⅔ cup flour
- ⅓ cup Buckwheat flour
- ¾ tsp salt
- ½ tsp Baking powder
- ½ cup milk (plus 2 tablespoons)
- 1 large egg
- ½ cup melted butter (divided)
- 18 Basil
- 5 ozs Parma ham (sliced thinly)
- ⅓ cup Stilton cheese (thinly sliced)

Preparation steps

For Blinis: Combine flours, salt and baking powder.

In a separate bowl, whisk milk, egg and 3 tablespoons butter. Whisk into the flour mixture.

Heat 1 tablespoon butter in a skillet. Drop the batter, 1 tablespoon at a time into hot skillet. Cook over medium-low heat, until bubbles form. Turn and cook for 1 minute longer, or until golden brown. Brush skillet with butter as needed. Repeat until batter is gone. Keep cooked blinis warm on low heat in the oven.

To Assemble: Top each blini with a basil leaf, Parma Ham, Stilton cheese and blueberry compote. Serve.
