Prosciutto and Cheese Quiche

- 6 large eggs
- 6 Tbsps grated Parmesan
- 150 milliliters Whole milk
- salt
- freshly ground pepper
- butter
- 2 scallions (finely chopped)
- 8 slices Prosciutto
- shaved Parmesan
Preparation steps
Beat the eggs vigorously, then stir in milk and cheese. Season with salt and pepper. Heat 2 teaspoons of butter in a frying pan and fry the onions in it until golden. Stir into the egg-cheese mixture.
Preheat the oven to 200°C (approximately 400°F). Grease a round baking tin (22 cm in diameter, approximately 9 inches) thoroughly with butter. Pour in the egg-cheese mixture and bake for about 6-8 minutes, or until solid. Rotate once, then place back in the oven until golden brown, or for another 5-6 minutes. Remove from the oven, then remove the quiche from the pan and cut into 8 pieces. Arrange on plates and serve garnished with slices of prosciutto and Parmesan cheese, as desired.
It cooks faster if you bake it in a wide frying pan like an omelet.
