- 7 ozs ready-made Puff pastry
- 2 Tbsps plain flour
- 6 cups Spinach (washed)
- 1 cup Gorgonzola (cubed)
- ¼ cup sunflower oil
- salt

- 1 egg (beaten)

Preparation steps
1.
Preheat the oven to 200°C | 400F | gas 6 and line a baking tray with parchment paper.
2.
Make the filling by heating the oil in a large pan over a medium-high heat. Add the spinach and let it wilt, moving around the pan continuously.
3.
Turn the heat down a little and add the cubed gorgonzola, letting it melt. Season the mixture with a little salt and some pepper.
4.
On a cold, flat surface, sprinkle a little flour and roll the pastry out to roughly 1 cm thick. Use an 8 cm cookie cutter to cut out rounds of pastry.
5.
Place a tablespoon of the spinach and cheese in the centre of each round of pastry and wet the circumference of the pastry with some water.
6.
Fold the pastry over the filling to form a semi-circle, making sure to seal the edges well.
7.
Transfer to the baking tray and brush the tops with the beaten egg. Bake for 12-15 minutes until risen and golden. Serve immediately.
