1 day-old Pretzel
4 Pork cutlets about 150 grams (approximately 5 ounces)
salt
freshly ground peppers
3 Tbsps sweet Mustard
4 Tbsps clarified butter
1 pc fresh Horseradish about 4 cm (approximately 2 inches)
2 Tbsps butter (browned)
1 lemon

Preparation steps

1.

Rub the pretzel on a cheese grater to create fine crumbs and spread crumbs on a flat plate. Rinse the pork cutlets, pat dry, and season lightly with salt, pepper and mustard.

2.

Press the cutlets firmly in the pretzel crumbs, covering all sides. Cook the cutlets in the clarified butter about 4 minutes on each side.

3.

Put the cutlets on a plate and grate fresh horseradish over them. Sprinkle with brown butter and serve with lemon wedges.
