- ¼ lemon (juice)
- ¼ tsp ground Mace
- ¼ tsp grated Nutmeg
- ¼ tsp White pepper
- 1 pinch cayenne pepper
- 1 pinch salt
- 7 ozs cooked, peeled shrimp
- For the garnish
- thyme

Preparation steps
1.
Melt the butter in a pan over a low heat, then simmer gently until dark flecks start to appear. Strain through butter muslin, or 2 sheets of absorbent kitchen paper into a jug.

Wipe out the pan and pour in 2/3 of the butter. Add the lemon juice, spices and salt and simmer very gently for 5 minutes. Remove from the heat and allow to cool, but not set.

Divide the shrimps between 4 ramekins, pressing them in tightly. Divide most of the warm spiced butter between the ramekins and chill until set.

Pour the remaining butter over the top and chill until set. Garnish with thyme and serve with crisp toast.
