Poultry Kebabs over Cornmeal
Arrange the cherry tomatoes, turkey breast, red pepper and red onion evenly on skewers. Brush with the olive oil and season with salt and pepper. Heat the grill to hot.
Grill the skewers for 8-10 minutes, turning occasionally until the turkey is cooked.
Meanwhile, prepare the semolina by placing it in a mixing bowl and covering with the hot chicken stock.
Cover the bowl with clingfilm and allow it to stand for 5 minutes until absorbed. Fluff the grains with a fork before transferring to serving bowls.
Arrange the brochettes on top and garnish with sprigs of thyme. Serve immediately.
