800 grams starchy potatoes
150 grams Radish
250 grams Quark
120 grams Crème fraiche
1 splash lemon juice
salt

1 onion
80 grams cooked ham
3 Tbsps vegetable oil
3 eggs
1 Tbsp finely chopped parsley
1 Tbsp finely chopped thyme
80 milliliters milk
4 Tbsps Yogurt (0.1% fat)

Preparation steps

1.

Rinse the potatoes and steam for about 30 minutes.

Rinse and finely grate the radishes. Mix together the quark, crème fraîche, lemon juice and radishes. Season with salt and pepper.

Peel the potatoes and press through a potato ricer. Peel and finely chop the onion. Heat 1 tablespoon of vegetable oil in a pan and sauté the onion and ham briefly. Whisk together the eggs, chopped herbs, milk and yogurt until smooth. Fold in the potatoes, ham and onions and season with salt and nutmeg. Preheat the waffle iron and grease oil. Spoon 2-3 tablespoons of the batter into the waffle iron and cook until golden brown. Cover to keep warm and continue with the remaining batter.

To serve: Place one waffle on a plate, spread with the radish cream and top with another waffle.
