2 cups all-purpose flour
2 tablespoons Cornmeal
1 teaspoon salt
½ teaspoon baking soda
2 large eggs (separated)
1 ¾ cups Buttermilk
4 tablespoons unsalted butter (melted and cooled)
3 cups fresh Strawberries (rinsed)
powdered sugar (for dusting)
For Whipped Cream
1 cup heavy whipping cream
3 tablespoons powdered sugar
½ teaspoon vanilla extract

Preparation steps

For Waffles:

Preheat oven to 250º F (to keep waffles warm). Preheat waffle pan or iron.

In a large bowl, whisk dry ingredients together. In a separate bowl, whisk the egg yolk with the buttermilk and melted butter.

In a separate bowl, beat egg whites until stiff peaks form.

Slowly add the buttermilk mixture to the dry ingredients, mixing gently with a rubber spatula. Gently fold in the egg whites.

Spray waffle pan or iron with nonstick cooking spray. Pour or spread an appropriate amount of batter into each waffle mold. Cook waffles according to manufacturer's instructions until cooked through and golden brown, approximately 3 to 4 minutes.

Transfer cooked waffles to rack in oven to keep warm, do not layer. Repeat until all the batter has been used.

Divide waffles among plates, top with a generous dollop of whipped cream, fresh strawberries, and dust with confectioners' sugar. Serve.

Chill glass or stainless steel mixing bowl and beaters. Beat cream until it begins to thicken. Add confectioners' sugar and vanilla; continue beating until peaks form. Refrigerate until ready to use.
