- 800 grams small, waxy potatoes
- 2 sticks Celery
- 100 milliliters Beef broth
- 3 Tbsps White vinegar
- 2 Tbsps lemon juice
- 3 Tbsps sunflower oil
- salt
- sugar
- 1 bunch Chives
Preparation steps

Boil the potatoes for 25 minutes. Peel and cool slightly. Rinse and trim the celery, then thinly slice. Heat the broth and add the celery. Remove from the heat, and stir in the vinegar, sugar, and lemon juice. Season to taste with salt and pepper.

Slice the potatoes, and add to the marinade. Mix gently and let rest for 10 minutes. Mix in the oil, and adjust the seasoning if necessary. Garnish with the chives, and serve on plates at room temperature.
