800 grams floury potatoes
1 small onion
2 eggs
4 Tbsps Pastry flour
1 pinch salt
freshly ground peppers
freshly grated Nutmeg
4 Tbsps vegetable oil (for cooking)
lingonberry (from a jar)
apple sauce (from a jar)

Preparation steps

1.

Rinse, peel and finely grate potatoes. Place in a colander and squeeze to drain. Collect all resulting juices and let stand a few minutes until starch has settled to the bottom. Drain liquid carefully and mix starch with grated potatoes. Peel onion, grate and squeeze.

Whisk eggs with flour, onion and potatoes, season with salt, pepper and nutmeg.

Heat some oil in a pan and put few tablespoons of potato mixture and flatten with a spoon. Cook for 4-5 minutes until pancakes are golden brown on both sides. Prepare all pancakes in the same manner. Drain on paper towels and keep warm in warm oven at 80°C (approximatley 175°F).

Serve with cranberry and apple sauce.
