1 tsp olive oil
700 grams peeled potatoes
1 stalk Leeks
1 pc ginger (about 3 cm long)
2 garlic cloves
250 grams unsweetened Coconut milk
150 milliliters Vegetable broth
1 tsp Mace
salt
1 pinch cayenne pepper

Preparation steps

Roast the sesame seeds in a dry frying pan. Let cool.

Grease a shallow baking dish with oil. Thinly slice the potatoes. Rinse the leek, halve lengthwise and cut into rings. Finely grate the garlic and ginger.

Mix the coconut milk, vegetable broth, ginger, garlic, mace and salt. Mix half of the sesame seeds and cayenne pepper. Mix the seasoned sesame seeds with the potatoes. Spread the potatoes and leek in the baking dish. Pour in the coconut milk mixture. Sprinkle the surface with the remaining sesame seeds. Bake for 30-40 minutes at 220°C (approximately 425°F). Remove from the oven, let cool and serve.
