Preparation steps

Peel 5 potatoes, coarsely chop and cook until tender. Grate 10 potatoes finely and squeeze with force in a dishcloth. Reserve the juice and wait for the starch to settle on the bottom. Drain the water carefully and add starch back to the pressed potatoes.

Drain the soft-boiled potatoes and mash to a pulp. Pour the slurry while still piping hot on the raw potato mixture, thoroughly stir, then shape into dumplings. Bring abundant salted water to a boil and add the dumplings into the bubbling saltwater. Reduce the heat and cook the dumplings until done, about 20 minutes. Lift out with a slotted spoon.
