1 kilogram starchy potatoes
salt
2 Tbsps melted butter
3 egg yolks (large eggs)
1 Tbsp Pastry flour
freshly ground pepper
freshly grated Nutmeg
2 garlic cloves
½ bunch cilantro
5 Tbsps Sesame seeds
clarified butter (for frying)

Preparation steps

1.

Peel, rinse and cut the potatoes into pieces. Boil the potato pieces in salted water for about 25 minutes until soft. Peel the garlic and squeeze through the press. Rinse the cilantro, shake dry, pluck the leaves and chop finely.

Drain the potato pieces and let cool slightly.

Press the still-warm potatoes through the ricer. Mix the mashed potatoes immediately with the butter, egg yolks, flour and nutmeg, and season with salt and pepper.

Add the garlic and the cilantro to the potato mixture, and knead quickly into a dough. The ground must be well together. If the dough is too wet or too dry, mix in a little flour or a little egg as needed.

5.

Make small 1 inch thick croquettes from the potato mixture.

6.

Place the sesame seeds in a deep dish and roll the croquettes into it.

7.

Heat clarified butter in a pan and fry the croquettes in it all around until golden.
