- 4 cups floury potatoes (peeled and quartered)
- 2 cups Sweet potato (peeled and quartered)
- 3 ¼ cups Savoy cabbage (cut into strips)
- ¼ cup butter
- 4 scallions (cut into rings)
- ⅔ cup milk
- Nutmeg
Preparation steps
1.
Cook the potatoes and the sweet potatoes in boiling salt water for around 30 min. Drain, mash and leave to cool.
2.
Blanche the cabbage in salt water for 10 min. Remove from the water with a draining spoon and set aside.
3.
Melt half the butter in a large pot. Add the spring onions and fry for a few minutes. Add the milk and heat through.
4.
Transfer the cabbage, potatoes and the remaining butter into a bowl and gradually stir in the spring onion mixture. Mix well and season with salt, ground black pepper and nutmeg.
