Potato and Shrimp Pan with Peppers
Peel potatoes and cut into 2 cm (approximately 3/4 inch) cubes. In a pan, fry potatoes in hot oil about 2 minutes. Turn potatoes and cook 2-3 minutes more. Rinse shrimp and pat dry. Peel and finely chop garlic. When potato cubes are golden-brown, remove from pan. Add shrimp and garlic and fry in the remaining oil, about 2 minutes. Rinse and halve peppers, remove seeds and ribs, and cut into 2 cm (approximately 3/4 inch) cubes. Rinse, trim and cut scallions crosswise. Add peppers and scallions and fry briefly. Return potatoes to pan and season with salt, pepper, and a squeeze of lemon juice. Serve with a fresh green salad, if desired.
