200 grams Cherry tomatoes (yellow and red)
2 scallions
8 small Sausage
300 milliliters Whipped cream
150 grams grated Cheese (such as Emmentaler)

Preparation steps

Preheat the oven to 200 ° C upper and lower heat.

Cut potatoes into pieces. Clean mushrooms and halve or quarter, depending on size. Peel onion and chop. Rinse and halve tomatoes. Rinse and dry scallions, cut into rings. Layer potatoes, mushrooms, onion, half of tomatoes and half of scallions in 4 ovenproof pans. Top with sausage.

Mix cream with cheese and season with salt and pepper. Pour over vegetables and bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes or until golden brown.

Break eggs and carefully slice two eggs into each pan. Sprinkle with remaining scallions and tomatoes and bake for another 5-10 minutes. Remove from the oven and serve.
