Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Grease 4 ramekins (about 350 ml or 1.6 cups) with butter.

Peel and finely dice potatoes. Rinse scallions and cut into strips, set some aside for garnish. Cut ham into strips, set some aside for garnish. Peel and mince garlic. Combine garlic, potatoes, scallions and ham and portion into ramekins.

3.

Whisk together cream, beer, eggs and parmesan. Season with nutmeg, salt and pepper. Pour over potatoes and bake until golden brown, about 40 minutes.

4.

Remove from oven and garnished with reserved spring onions, ham and thyme. Serve in the ramekins.
