2 Tbsps lemon juice

1 cup cream (30% fat)
1 cup Brie
2 Tbsps butter

Preparation steps

1.
Butter a large gratin dish. Preheat the oven to 200C (180C fan) 375F, gas 5.

Wash and peel the potatoes and slice very thinly. Peel and quarter the apples and cut into thin wedges. Sprinkle immediately with lemon juice to prevent browning.
3.
Arrange the potato and apple slices in the gratin dish in alternate layers, sprinkling each layer with salt, pepper and a little thyme.
4.
Finally pour the cream over and top with the sliced cheese. Dot with flakes of butter and bake on the middle shelf of the oven for about 45 minutes.
5.
Serve sprinkled with fresh thyme.
