- 800 grams Smoked pork chop (Salmon piece)

- 2 Tbsps vegetable oil
- 600 grams Hokkaido pumpkin
- 200 grams shallots
- 2 bay leaves
- 200 milliliters Apple juice
- 200 milliliters Vegetable broth
- 50 grams fresh Horseradish
- 1 bed Cress
- salt

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Season the meat with pepper and brown on all sides in hot oil. Put the meat in a roasting pan. Place in the lower third of the preheated oven and cook for 20 minutes.

Meanwhile, remove the seeds from the pumpkin. Cut the pumpkin into quarters, then cut into pieces. Peel the shallots and cut in half. Add to the meat after 20 minutes. Add the bay leaf and deglaze with apple juice and broth. Place in the oven for another 15-20 minutes.
4.
Peel the horseradish and grate finely. Cut the cress into small bunches. Slice the meat, season the pumpkin with salt and pepper. Serve with the fresh horseradish and cress.
