- 1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
- 600 grams waxy potatoes
- 2 Tbsps butter
- salt
- freshly ground peppers
- 200 milliliters Vegetable broth
- 4 Pork (each 180 grams)
- 1 Tbsp clarified butter
- 1 Tbsp Horseradish (prepared)
- 2 Tbsps scallions
- Horseradish

Preparation steps

Peel the soup vegetables and cut into thin strips (julienne). Scrub, peel and slice the potatoes. Sauté the potatoes in butter and season with salt and pepper. Pour in the broth and cook covered for about 20 minutes. Briefly sauté the root vegetables in a small saucepan with butter, add 2-3 tablespoons water, season with salt and pepper, cover and simmer for about 5 minutes.

Rinse steaks and pat dry. Season with salt and pepper. Melt butter in a skillet, add steaks and fry each side for 2-3 minutes. Season the potatoes with the horseradish. Arrange the potato slices with the liquid on 4 warmed plates, arrange the steaks with the root vegetables on top and garnish with chives. Sprinkle with grated horseradish and serve immediately.
