- 1 kilogram Roasted pork (with rind)
- 2 garlic cloves
- 3 small, red onions
- ½ l Beef broth
- 2 bay leaves
- 600 grams Pumpkin
- salt
- freshly ground peppers
- 1 Tbsp honey
Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F).

Rinse pork roast, pat dry and carve the rind with a sharp knife.

Season pork with salt and pepper.

Peel garlic and chop finely. Peel onions and cut in half. Add broth to a pot and bring to a boil, add pork to a roasting pan and pour boiling broth over meat, add bay leaves and garlic. Simmer meat for 2 hours in the preheated oven while repeatedly pouring liquid over.

Cut pumpkin into wedges. Add pumpkin and onions around pork and cook an additional 20-30 minutes. If the liquid evaporates, add extra broth. Brush pork with honey. Preheat the oven to 220°C (approximately 425°F) and cook for another 15 minutes. Season everything with salt and pepper and serve.
