Pork with Pineapple Salsa
Peel pineapple, quarter lengthwise, remove stalk, and finely dice flesh.
Halve chili lengthwise, remove seeds and inner skins and chop finely. Melt butter in nonstick pan and caramelize sugar until light brown. Add chili, ginger, mint and pineapple to pan, adding a little water if needed, and simmer lightly for approximately 5 minutes.
At the same time, fry pork slices in hot butter for 1 minute on each side.
Arrange 3 pork slices with pineapple salsa on preheated plates and serve garnished with mint.
