250 grams Basmati rice

2 centimeters ginger
1 garlic clove
250 grams Mushrooms (such as: shiitake and button mushrooms)
300 grams green Asparagus
200 grams Bok Choy
400 grams Pork
2 Tbsps sesame oil
2 Tbsps Fish sauce
1 Tbsp soy sauce

Preparation steps

1.

Rinse and drain rice. Boil about 500 ml (approximately 2 cups) of salted water and add rice. Cover and cook over low heat for about 20 minutes.

Peel and press ginger and garlic. Rinse mushrooms and cut in half. Trim off bottom third of asparagus and cut into 3-4 cm (approximately 1 1/4-inch) long pieces. Rinse and slice bok choy. Rinse pork and cut into bite-sized pieces.

Heat oil in a pan and brown pork, garlic and ginger. Remove pork from pan and cook asparagus in the same pan for about 5 minutes, stirring constantly. Add mushrooms and cook together for 2-3 minutes. Stir in bok choy, fish sauce and soy sauce. Put pork back into the pan and cook for 2-3 minutes. Add 2-3 tablespoons of water. Season with salt and pepper.

Plate rice and serve pork mixture over rice.
