- For the marinade
- 1 Tbsp salt
- ½ tsp 5 spice powder
- ½ tsp sichuan pepper
- 2 tsps White pepper
- 1 Star anise (crushed)
- 1 tsp sugar
- 6 cups strips Pork belly (cut into bite size chunks)
- For the stir fry
- ⅜ cup Peanut oil
- 4 red peppers (seeds removed and cut into strips)
- 4 cloves garlic cloves (crushed)
- 3 Tbsps sichuan chili paste
- 2 Tbsps yellow Bean sauce
- 2 tsps caster sugar (superfine)
- 1 Tbsp dry sherry
- 3 scallions (each cut into 5)

1 Measuring cups, 1 Tablespoon, 1 Teaspoon, 2 Bowls, 1 Hand mixer mit Knethaken, 1 Kitchen towel, 1 Rolling pin, 1 Fork, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Peeler, 1 Wooden spoon, 1 Mandoline, 1 Non-stick pan mit Deckel, 1 Baking sheet, 1 Parchment paper
Preparation steps
1.
Mix the dry ingredients for the marinade, rub the mixture into the pork belly pieces and leave to marinade for 2 hours.

In a wok or large, heavy skillet, heat the oil until smoking, add the pork belly pieces and the marinade ingredients and stir-fry for 6 - 8 minutes or until lightly browned.
3.
Add the peppers and garlic to the pan, stir-fry 1 minute then add the chilli paste, yellow bean sauce, sugar and sherry and stir about 1 minute.
4.
Add the scallions and stir no more than a few seconds. Serve hot.
