- For the pork
- 1 kilogram Pork shoulder (rind-on)
- 2 Tbsps Lard
- salt
- peppers
- ground paprika
- Mustard cream
- 3 Tbsps medium-hot Mustard
- 6 Tbsps Crème fraiche
- ½ bunch Cress (to garnish)

Preparation steps

Rinse the meat, pat dry and score the rind in a diamond pattern. Season with salt, pepper and paprika. Preheat the oven to 180°C (approximately 350°F). Heat the lard in a large roasting pan and sear the meat, rind-side down. Transfer the roasting pan to the oven and roast for about 30 minutes. Flip the meat over and roast for another 1-1.5 hours.

For the mustard sauce: Mix the mustard and crème fraîche together and season with salt and pepper. Trim the cress and sprinkle over the sauce.

Remove the roast from the oven and let cool. Once lukewarm, slice and serve with the mustard sauce.
