- 800 grams Pork loin
- 8 thyme
- 1 rosemary
- 3 parsley
- 40 grams green Olives (pitted)
- 40 grams black Olives (pitted)
- 8 slices day-old white bread
- 20 grams butter
- 1 Tbsp Mustard
- vegetable oil (for cooking)
- salt
- freshly ground pepper

Preparation steps
1.
Rinse and pat dry meat. Heat oil in a roasting pan and sear meat on all sides.
2.
Cut off crust from bread and coarsely chop bread.
3.
Rinse and shake dry herbs, pluck off leaves and chop coarsely. Mix with olives, white bread and butter. Season with salt and pepper.
4.
Brush meat with mustard and spread bread and herb mixture on top. Press gently and roast in preheated oven at 140°C (approximately 275°F) for about 20-30 minutes. If crust browns too much, cover with aluminum foil.
5.
Remove from the oven and let rest briefly. Slice and serve.
