700 grams Pork tenderloin

2 Tbsps medium, hot Mustard
½ Orange (zest)
3 Tbsps chopped Pine nuts
3 Tbsps freshly chopped parsley
2 Tbsps freshly chopped thyme
500 Gnocchi (pre-made; from the refrigerated section)
300 grams crushed Tomatoes
1 garlic clove
1 tsp honey
1 tsp Tomato paste
1 splash lemon juice

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse pork, pat dry, and season with salt and pepper. Sear in 2 tablespoons of olive oil on each side. Remove and coat with mustard. Mix together the orange peel, pine nuts, thyme, and parsley. Roll the meat in it. Place on an oiled sheet and cook for 30-35 minutes.

Meanwhile, cook gnocchi according to instructions on the package.

For the tomato sauce, peel and mince the garlic and cook in 2 tablespoons of oil. Add the tomato sauce and then the crushed tomatoes. Let simmer for about 5 minutes. Season with honey, lemon juice, and salt.

To serve: Distribute the drained gnocchi on a plate. Cover with the sauce and season with freshly ground pepper. Cut pork and serve with gnocchi.
