16 ozs frozen Gnocchi
8 ozs fresh Mozzarella (little cherry/ciliegine size packed in water)
2 Tbsps olive oil
1 clove garlic cloves (peeled and minced)
4 cups fresh, diced Roma tomatoes (rinsed; seeded)
¼ tsp cayenne pepper
½ tsp ground Fennel
freshly ground Black pepper (to taste)
1 tsp Italian seasoning (to taste)
¼ cup Tomato paste
fresh Basil (to garnish)

Preparation steps

In a pot of salted boiling water, cook gnocchi according to package directions; drain well and keep warm. Rinse and drain the mozzarella balls and set aside.

In a large skillet, set over medium heat, add olive oil. Once the oil starts to sizzle, add garlic and saute for 1 minute, or until the garlic is soft and fragrant. Add diced tomatoes, cayenne pepper, fennel, pepper and Italian seasoning. Simmer for 5 to 7 minutes, stirring frequently, until the tomatoes are just soft. Add the tomato paste, stirring to incorporate. Add gnocchi and gently mix to combine. Remove skillet from heat source. Add mozzarella and toss gently to combine.

Divide evenly between plates. Garnish with fresh basil. Serve.
