4 bone-in Pork loin (chops)
coarse salt (to taste)
freshly ground Black pepper (to taste)
1 Tbsp Adobo sauce
2 Tbsps light brown sugar
1 ripe Mango (peeled and cut into a 1/2-inch dice)
½ small Red onion (peeled and finely chopped)
1 small Jalapeño (pepper)
2 Tbsps fresh Lime juice

Preparation steps

Preheat broiler and position the oven rack 4-inches / 10 cm from heat. Line a rimmed baking sheet with aluminum foil. Place pork on prepared baking sheet; season with salt and pepper. Brush with adobo sauce; sprinkle with brown sugar.

Broil for 8 to 10 minutes, turning once, or until an instant-read thermometer inserted in thickest part of the pork chop, avoiding bone, registers 155º F /68º C. Let rest 5 minutes.

Meanwhile, in a medium bowl, combine mango, onion, jalapeno, and lime juice. Season with salt and pepper, and toss to combine. Spoon mango salsa over the pork chops and serve with a side salad, if desired.
