- For the pork chops
- 10 ozs mixed Cherry tomatoes (Yellow, Orange and Red)
- 2 Peaches
- 4 Tbsps olive oil
- 1 Lime (juiced)
- 1 Tbsp chopped mint
- salt
- freshly ground peppers
- sugar
- 4 Pork cutlets
- 2 Tbsps vegetable oil
- For garnish
- 4 mint

Preparation steps

For the salsa, rinse the tomatoes and cut into small cubes. Rinse the peaches, cut in half, remove pits and cut into small cubes. Toss the tomatoes and peaches with the oil, lime juice and chopped mint. Season with salt, pepper and sugar.

Rinse the pork chops, pat dry, and season with salt and colorful peppercorns. Fry in a pan with hot oil for about 5 minutes on each side. Remove from heat and serve with the salsa and a sprig of mint on a warmed serving platter.
