For Boneless Pork Chops
1 Tbsp good-quality olive oil
4 boneless Pork chop
salt (to taste)
peppers (to taste)
For Asparagus
1 Tbsp butter
¼ cup good-quality olive oil
16 ozs fresh Asparagus (rinsed and trimmed)
salt (to taste)
freshly ground Black pepper (to taste)
In Addition
1 fresh lemon (sliced)
fresh parsley (for garnish)

Preparation steps

For Boneless Pork Chops:

Heat oil in a large heavy skillet over medium high heat. Season pork chops with salt and pepper and place pork in pan and cook for 2 minutes each side. Lower heat to medium-low, and continue cooking for 4 minutes per side. Remove pork from pan and transfer to a platter tented with foil.

For Asparagus:

Meanwhile, melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness. Drain off excess oil and season to taste with salt and pepper.

To Serve:

Divide pork chops and asparagus evenly between 4 serving plates. Garnish with lemon slices and parsley. Serve.
