- 2 Tbsps Fish sauce
- 3 Tbsps vegetable oil
- 1 green chili pepper (cut into strips)
- 14 ozs pork fillets (thinly sliced)
- 12 ozs thin, asian Egg noodle
- 2 cloves garlic cloves (finely chopped)
- 1 Leek (cut into thin strips)
- 5 ozs shiitake mushrooms (sliced)
- 1 tsp sugar
- 1 Lettuce

Preparation steps
1.
Mix together the fish sauce, 1 tablespoon oil and half the chilli strips. Add the meat and stir well. Cover and leave to stand for 30 minutes.
2.
Cook the noodles according to the pack instructions. Drain well and set aside.
3.
Heat 2 tablespoons oil in a wok or frying pan, add the meat (reserve the marinade) and stir fry for 1 minute until browned. Remove and set aside.
4.
Add the remaining chilli strips, garlic, leeks and mushrooms and stir fry for 1-2 minutes.
5.
Stir in the meat, marinade and sugar and cook for 3 minutes. Stir in the noodles.
6.
Spoon into lettuce leaves just before serving.
