- Ingredients
- 500 grams Pork tenderloin (ready to cook)
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- 2 carrots
- 1 handful Basil
- 1 garlic clove
- 1 Tbsp lemon juice
- 100 grams Yogurt (0.1% fat)
- 200 grams cream cheese
- 4 Whole-wheat tortillas
Preparation steps
1.
Preheat oven to 150°C (approximately 300°F).
2.
Rinse meat and pat dry. Season with salt and pepper and sear in a hot pan until brown with oil. Place directly on oven rack with a drippings pan underneath and roast for about 20 minutes.
3.
Peel and grate carrots or cut into sticks. Rinse basil, pat dry and pluck off the leaves. Place half aside and coarsely chop the rest. Puree peeled clove of garlic, lemon juice, yogurt and cream cheese in a blender.
4.
Heat tortillas in oven briefly if desired. Spread with basil cream and sprinkle with carrots. Remove meat from oven and let it rest briefly. Cut into thin slices and place on tortillas. Sprinkle with basil leaves and fold tortillas together. Secure with toothpicks and serve.
