- 200 grams potatoes (starchy)
- 2 garlic cloves
- 1 bunch Basil
- 1 Tbsp Crème fraiche
- 50 milliliters olive oil
- 2 Tbsps lemon juice
- salt
- freshly ground peppers

Preparation steps
1.
Cook potatoes in the peels for about 30 minutes. Drain, peel, press through a potato ricer and let evaporate. Stir with finely chopped garlic, finely chopped basil, creme fraiche and lemon juice.
2.
Mix in enough olive oil that a smooth cream forms. Season with salt and pepper.
