- 3 cups Yogurt
- 5 sheets white gelatin
- 2 tsps grated Lemon peel
- 6 Tbsps lemon juice
- 60 grams honey
- 2 Tbsps toasted Poppy seeds
- 125 grams Whipped cream
- 500 grams Raspberries
- 75 grams powdered sugar
- 2 sprigs Lemon balm

Preparation steps

Soak gelatine in cold water. Mix yogurt, 1 teaspoon of lemon zest, 4 teaspoons of lemon juice, honey and poppy seeds. Squeeze out gelatine well and dissolve in water. Mix a little of yogurt mixture with gelatine well, add to remaining yogurt. Whip heavy cream until stiff and fold into yogurt mixture.

Pour cream into four small ramekins and refrigerate for 2 hours. Prepare berry sauce. Set aside 150 grams (approximately 5 ounces) of raspberries, puree the rest and strain through a sieve, mix with remaining lemon juice. Combine with powdered sugar.

Bring puree to a boil and simmer for 5 minutes on low heat. Invert cream onto plates and drizzle with raspberry sauce. Garnish with remaining raspberries and lemon balm leaves, serve.
