Poppy Seed Cookies
ready in 1 hr 52 min.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line two cookie sheets with waxed paper.
Mix together the poppy seeds, flour, sugar, vanilla sugar and a pinch of salt. Add the butter and knead everything into a smooth dough. Split into two portions and create two rolls, each approx. 30 cm long. Wrap them in plastic wrap and chill for approx. 30 minutes.
Cut the rolls into pieces 1 cm thick. Shape them into balls and place on the prepared cookie sheets. Create a small dent in the middle of each ball and fill this dent with lemon curd squeezed from a piping bag.
Bake for 10-12 minutes and leave the cookies to cool on a wire rack.
Quickly fry the glass noodles in hot oil and dry with paper towel. Decorate the cookies with the noodles and dust with icing sugar.
