20 grams Yeast
8 Tbsps milk
1 egg
2 Tbsps sugar

200 grams Poppy seeds
40 grams sugar
250 milliliters milk
½ lemon (zested)

Preparation steps


For the cookies, mix yeast with 4 tablespoons milk until smooth. Mix flour and sugar and make a well in the center. Stir yeast mixture into well in flour to a small sponge, cover with a bit of flour from edge of bowl and let stand until sponge is doubled in size. Melt butter, heat remaining milk and knead with egg into flour mixture to a dough.Knead dough thoroughly, cover and let rise in a warm place for about 60 minutes.


For the filling, stir together poppy seeds, sugar, milk and lemon zest in a saucepan to a thick paste, bring to a boil while stirring and let cool. Preheat oven to 180°C (approximately 350 F). Thinly roll out dough on a floured surface and cut into triangles 10-15 cm (approximately 4-6 inches). Spoon a bit of filling onto each triangle and fold corners to cover filling. Slightly press edges of cookies with a fork to seal and brush with egg yolk. Place cookies on a greased baking sheet and bake until golden brown, 20-25 minutes.
