Ingredients

200 grams Pastry flour
20 grams Yeast
100 milliliters lukewarm water
4 Tbsps olive oil
salt
For the topping
400 grams Tomatoes
2 Tbsps olive oil
1 tsp dried thyme
salt
peppers (from the mill)
150 grams Mozzarella
150 grams Chorizo
½ little green Bell pepper
black Olives

Preparation steps

1.

Put flour into a bowl and make a well in the middle. Crumble yeast in a little water and pouring into well. Cover with flour and allow to stand for 15 minutes. Mix residual water with salt and oil and knead everything into a smooth dough. Cover dough and let rise for 1 hour in a warm place.

Blanch tomatoes then rinse with cold water. Peel tomatoes, cut into small cubes and bring to a boil with 1 tablespoon oil in a pot. Season with thyme, salt and pepper.

Cut mozzarella and chorizo sausage into thin slices.

Rinse peppers, remove seeds and halve crosswise into thin strips. Cut olives into small strips.

5.

Lightly oil pizza mold. Knead dough again, roll out and place on mold with slightly thicker edges.

Preheat oven to 250 degrees. Spread tomato sauce over dough. Distribute mozzarella and sausage slices on top, sprinkle with paprika and olive strips and drizzle with a little olive oil. Bake pizza in a hot oven until cheese bleeds and dough is lightly browned, about 12 minutes.
