For the bars
125 grams Margarine
100 grams brown sugar
1 packet Vanilla sugar
150 grams Pastry flour
100 grams flaked Oats
80 grams finely chopped Pistachio
For the topping
3 Tbsps soft butter
3 Tbsps brown sugar
1/2 Oranges (juice)
6 tsps Pastry flour
50 grams dried Apricot
50 grams raisins
50 grams Pistachio

Preparation steps

For the bars: In a bowl, stir the margarine with the sugar and vanilla sugar. Stir in the flour, oats and pistachios. Press into a parchment-lined rectangular baking dish so that the bars will be 1 cm (approximately 1/4 inch) thick. Bake in a 180°C (approximately 350°F)(gas mark 2-3, fan: 160 degrees) for 12-15 minutes.

For the topping: In a bowl, stir the butter with the sugar. Add the orange juice and flour until thoroughly combined. Cut the apricots into small pieces and stir into the flour mixture along with the raisins and pistachios. Crumble on top of the bars and bake for another 12-15 minutes. Allow to cool and serve cut into pieces.
