- 100 grams brown Rock candy
- 1 dried chili pepper

Preparation steps
1.
Peel the pineapple, removing all black "eyes". Remove the core with a pineapple corer. Slice into 12 pieces, and divide onto plates.
2.
Add the brown sugar crystals and chili to a mortar, and crush finely. Sprinkle the sugar over the pineapple, and melt using a kitchen torch. Caramelize the sugar until light brown. Serve immediately.
3.
Serve with a scoop of vanilla ice cream.
