- 1 Pike (about 1.8kg, ready to cook)
- 100 milliliters fish stock
- 200 milliliters Whipped cream
- 150 grams Crème fraiche
- salt
- white, freshly ground peppers
- 1 handful mixed Fresh herbs (such as basil, dill, chervil, parsley)
Preparation steps

Rinse pike, pat dry and season inside and out with salt and pepper. Add pike to a roasting pan or large baking pan. Add half of herbs. Add fish stock, cream and crème fraîche.

Bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes. During cooking time pour cream sauce over fish occasionally.
3.
To serve, arrange fish on a serving dish with remaining herbs and sauce and season with salt and pepper to taste.
