- 1 ⅔ cups apple cider vinegar
- ⅔ cup honey
- 3 Tbsps salt
- 4 scallions (cut into rings)
- 8 Star anise
- 1 Tbsp Juniper Berry
- 2 Tbsps Mustard seed
- 10 cups Braised Cucumber (peeled, cut in half lengthways and sliced)

Preparation steps
1.
Place the vinegar, 300 ml water, the honey, salt, spring onions and the spices in a pot and bring to the boil. Add the cucumbers and bring to the boil.
2.
Remove the cucumbers from the broth using a draining spoon and place them in the prepared jars. Add the hot both, close well and leave to cool. Leave to steep for four weeks before consumption.
