- 7 ozs cellophane noodle
- 4 cups shiitake mushrooms
- 2 Tbsps Peanut oil
- 1 red Bell pepper (sliced into strips)
- 4 cups soybean sprout
- 3 Tbsps soy sauce
- 1 tsp freshly grated ginger
- 1 chili pepper (dried and ground)
- Chives (for garnishing)

Preparation steps
1.
Cook the cellophane noodles according to package directions. Drain well.
2.
Brush the mushrooms clean. Saute in hot oil for 1-2 minutes. Add the bell pepper and sprouts continue sauteing for 2-3 minutes longer until soft. Remove from the flame.
3.
Swirl in the noodles and season with the soy sauce, ginger and chili. Serve on small plates garnished with chives.
