1 Tbsp tomato puree
¼ cup Tomato juice
2 Tbsps olive oil
1 clove garlic cloves
1 shallot

4 Tbsps shaved Parmesan

Preparation steps

Cut a cross in each tomato at the stem end, drop into boiling water for a few seconds, refresh in cold water then skin and dice. Peel the shallot and garlic and chop very finely. Cook the pasta in plenty of boiling, salted water until al dente. Heat the oil and sweat the shallot and garlic until translucent. Stir in the tomato puree and cook briefly, then add the tomatoes and the tomato juice. Season with salt, pepper and a pinch of sugar. Simmer for about 20 minutes. Drain the pasta and mix with the tomato sauce. Serve in warmed bowls scattered with Parmesan shavings and basil leaves.
